Massaged Kale Salad

Let’s all massage kale...and see what happens.

Ingredients

FOR THE DRESSING

  • 1 tsp udo's oil
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 1/2   lemon, juiced
  • Salt, to taste
  • Black Pepper, to taste

FOR THE SALAD

  • Handful kale, thinly sliced
  • 1 red apple, thinly sliced
  • 1/4   purple cabbage, thinly sliced
  • 1/4   red onion, thinly sliced
  • Handful activated nuts
  • Salt, to taste
  • Black Pepper, to taste

Method

  1. To prepare the dressing, whisk together the ingredients, season and set aside.
  2. To prepare the salad, rinse and chop the kale.
  3. Put in a large bowl, season and massage until the kale leaves soften.
  4. Add all the salad ingredients to the bowl and drizzle with the dressing.
  5. Toss to coat and serve.
